Savršena “caprese” salata/The Perfect Entree: “Caprese”

Volim ljeto. 

Volim ljetne plodove, volim miris mora i kreme za sunčanje. Volim čistu zelenu u krošnjama, volim zlatne sunčane niti koje se prosipaju po nebu, volim plavetnilo nježnih nebeskih očiju, volim debele i pahuljaste nasmijane oblake. Volim čuti sitni zvuk zveckanja čaša za vino, i šum noćnog povjetarca kako se isprepleće s ljetnim žamorom. Volim bjelinu mirisnog rublja kad suši. Volim nježnost svilenkastog bosiljka, i kako mi škaklja prste kad ga uberem. Volim raskoš i zamamnost žutih cvjetova i volim kako me ispod njih zaigrano i ponosno gledaju punašni šareni plodovi.

Caprese je talijanska salata koja slavi ljeto, jednostavnost, ali i jednu prekrasnu divu – Italiju. Jednako je gizdava, prelijepa i prosta. Ono što je kod nje najvažnije je – kvaliteta. Uberite divne rajčice koje ste s ljubavlju probrali s tržnice, ili iz vlastitog vrta ako imate tu sreću, pronađite poštenog opskrbljivača kvalitetnim djevičanskim maslinovim uljem i potražite neki sir  koji je toliko dobar da vam je zbog toga neugodno (mozzarella, skuta, ricotta). Nabavite još malo svježeg bosiljka i to je sve!

Moram priznati da što se tiče ulja, ja povremeno imam sreće, a povremeno sam se prisiljena pomiriti s osrednjom kvalitetom. Ukoliko netko poznaje dobrog opskrbljivača na rjiečkom području, neka mi ga slobodno preporuči. Što se tiče sira, skuta “Buretić” s opatijske tržnice uistinu je sir bez premca. Mekan, lagan s tom divnom mliječnom notom koja vas zbunjuje i podsjeća na neka ljepša vremena, budi uspomene i sjećanja na tradicije za koje ste sretni da ipak nisu nestale.

Dakle, za jedan ovakav šareni pladanj s talijanskim bojama i tradicijama pripremite:

3 mesnate mirisne(!)rajčice, može i različitih vrsta.

100gr skute (ili nekog drugog domaćeg sira)

5-6 listova svježeg bosiljka

maslinovo ulje, malo soli i papra

Narežite na debele kriške i poslažite, sir nakidajte i sve lijepo posolite. Dodajte i malo papra. Obilno pospite s djevičanskim maslinovim uljem i uživajte! 🙂

The Perfect Entree: “Caprese”

I love summer.

I love summer fruits, I like the smell of the sea and sun cream in the air. I love the clearness of green in the trees, like the golden sun net that’s spilled across the sky, I like a bit of celestial blue in heavens eyes, I like the the fluffy clouds smiling. I love to hear the small sound of clinking wine glasses, and the sound of the night breeze intertwined with the summer murmur. I love the white fragrant sheets when drying . I love the tenderness silky basil, and how he tickle my fingers when he picked. I love luxury and lure of yellow flowers and love to me under them playfully and proudly look plump colorful fruits.

Caprese salad is an Italian dish that celebrates summer, simplicity, and a beautiful diva – Italy. It is equally dandy, beautiful and simple. What is most important to her is – quality. Pick some wonderful tomatoes that are carefully selected from the market, or from our own garden if you are lucky, find an honest supplier of high-quality virgin olive oil and look for a cheese that is so good that it makes you embarrassed (mozzarella, cottage cheese, ricotta). Get a little fresh basil, and that’s all!

I must admit that when it comes to oil, sometimes I  had luck and sometimes I not. If anyone knows of a good supplier in Rijeka area, let me know. As for the cheese, curd cheese “Buretić” with Opatija market is truly peerless cheese. A soft, easy with that wonderful milk note that confuses you and reminds you of a happier time. It brings back memories of the tradition that you are lucky still haven’t disappeared.

So, for such a colorful platter with Italian colors and traditions prepare:

3 fleshy fragrant (!) Tomatoes, can and various kinds.

100g ricotta/curd cheese (or other local cheese)

5-6 leaves of fresh basil

olive oil, a little salt and pepper

Cut into thick slices, tear off pieces of  the cheese and salt. Add a little pepper. Sprinkle a lot of with virgin olive oil and enjoy! 🙂
