The Perfect Burger with whiskey sauce

Prije nego što sam upoznala svog dragog, nikad nisam pogledala nijednu utakmicu u životu. A sada, pa pogledam kad  Rijeka igra obavezno. A ponekad gledam i neke druge utakmice, pa ga pitam za koga moram navijati. On uvijek kaže “navijaj za crvene, ljubavi” ili “navijaj da plavi daju gol”. Rekla sam mu da imam posebnu moć, pa me sada zove kada je utakmica i kaže ” ajde, možeš ti molim te ono svoje izčarobirati da daju gol, vidi kako igraju”…i tako, ja njega vučem na Stefanovskog i Šerbedžiju, a on mene na stadione… i to zapravo super funkcionira. Osobito me raduje obaveza da se, kada je utakmica, uvijek mora jesti cheeseburger. Ili hamburger, bilo kakav burger. Prošećemo onda nakon utakmice do Buddy’sa, gdje gledamo sve brojne očeve kako s djecom dolaze na hamburger u nogometnim dresovima, a djeci se crvene nosići iznad navijačkih šalova. Bučne skupine dečkiju koji se živo pozdravljaju i poneki par isto svrati na hamburger nakon utakmice. Ja nisam kao ostale žene, pa kad jedem cheeseburger, onda to mora biti pravi. S lukom, a bez ajvara 😉

Pa sam odlučila pripremiti jedan pravi, opasni, muški burger! I to umakom od jakog whiskeya, slatkog klinčića, luka, kečapa i češnjaka! Spektakularno! Obavezno preporučujem isprobati! Naravno, ima i par trikova da si skratite put, ipak je vikend 😉

Before I met my B, I’ve never looked at a single football game in my life. And now, I watch every game of Rijeka . And sometimes I watch some other games, and I ask him about who is playing. He always says “cheer for the red, love” or “support the blue ones to score.” I told him that I have a special power, so I am now called while the football game is on to do some magic “darling, can you please, …why don’t you do  some of your magic for the score, look how they are playing” … and so, I’m dragging him to go see Stefanovski and Serbedzija, and hee drags  me to the stadium … and that actually works great. I’m particularly looking forward to  – when we go to a football game, or wathicng one on the tv –  the obligation to eat a cheeseburger. Or hamburger, or any burger. So I decided to prepare a real, tough, manly burger! With a strong whiskey sauce, sweet cloves, onions, ketchup and garlic! Spectacular! Be sure to try it! And off course, there are a few tricks that you shorten the time, though the weekend;)

Za početak, možete napraviti svoje omiljene burgere. Ja obično radim juneće/goveđe, s malo soli, jajem i češnjakom. Bez puno komplakacija. Sumak je divan bliskoistočni začin i, za mene, na najbolji način komplimentira mljeveno meso. Radite male burgere, manje od veličine dlana (malog dlana, kao mog 🙂 ) Nekako je dekorativnije i više ih možete staviti u jedno pecivo. Osim toga, pazite da Vam je meso na sobnoj temeperaturi, dakle, neka bude bar sat vremena izvan hladnjaka, a osim toga, kada ga zamijesite, mora odstajati barem pola sata kako bi se povezalo.

Na ovom koraku – imam dobru vijest – možete i varati. Naravno, jednostavno kupite svoje najdraže pljeskavice ili uštipke kod mesara i na vrijeme ih izvadite iz frižidera.

Pecite na laganoj vatri isprva, a zatim pojačajte na srednju kako bi se napravila fina korica.

So, you can make you own favorite beef burgers – I use minced beef, some garlic, one egg, salt and sumac. I love sumac with minced beef, that’s the perfect spice to compliment this kind of meat. Do little burgers – like – smaller than the size of a hand – I mean, my hand. and it’s little 😀 I find it better that way. It looks more fun when there are tree peaces on a bun.

The meat has to be room temperature, and cook it on low heat, than, on the end, turn it to medium, to get a nice brown crust.

Of course, you can cheat on this step. Just go to your butcher, and buy your favorite burgers! 🙂

Ovo je isto tako bila odlična prilika da napokon iskoristim svoju divnu novu dugačku daksu iz Jamijevoj restorana u Londonu! Dada, onaj Jamijev restoran gdje je mali Jamie krenuo raditikod Gennara. To je sada Jamie’s Italian. Morala sam si tom prilikom uzeti neki super suvenir 🙂 Ali, o tom putu ćemo nekom drugom prilikom.

This was also a perfect occasion to use my new Jamie’s Italien bord from London! I was so happy I found that great place where Jamie started working, I had to take one of these beautiful suvernirs home with me.

Za ovaj receptić Vam je potrebno:

  • mljeveno juneće meso, dva režnaj češnjaka, sol, sumak, malo ulja, jaje
  • peciva po želji
  • ljubičasti luk, rotkvica, ocat (ja sam imala rižin, ali može bilo koji), sol i šećer
  • pola kupusa, dve mrkvice, jedna paprika, dvije žlice majoneze, tri žlice jogurt, limun, sol, harisa ili čili, origano svježi
  • ljubičasti luk, 6 režnjeva češnjaka, čaša whiskeya, dimljena paprika, smeđi šećer, sol, 3 mljevena klinčića, 5 žlica kečapa (heinz), žlica maslaca, malo pasirane rajčice
  • senf, majoneza
  • panceta

For this great burgers you will need

  • minced beef, two cloves of garlic, salt, sumak, a little oil, egg
    rolls if desired
  • purple onion, radish, vinegar (I used to have rice, but can any), salt and sugar
  • half a cabbage, two carrots, one pepper, two tablespoons of mayonnaise three tablespoons of yogurt, lemon, salt, Haris or chili, fresh oregano
    purple onion, 6 cloves of garlic, a glass of whiskey, smoked paprika, brown sugar, salt, 3 minced cloves, 5 tablespoons ketchup (Heinz), a tablespoon of butter, a little tomato paste
    mustard, mayonnaise

Prilično sam sigurna da najveću promjenu u burgerima radi ovaj odlični umak! Za njega, sitno sjeckajte luk i češnjak, s lagano prijajte s malo maslaca. Dodajte whiskey, pa, kada ishlapi alkohol, dodajte i dimljenu papriku, sol, kečap, smeđi šećer i pasiranu rajčicu. Pirjajte dok se umak ne reducira i ne bude gust. Probajte obavezno i prilagodite svojem ukusu.

I’m pretty sure that the biggest change in this burger does the great sauce! To get this smoky strong hot and sweet flavour, finely chop the onion and garlic, with a little butter on lower heat. Add the whiskey, and when alcohol evaporates, add the smoked paprika, salt, ketchup, brown sugar and tomato puree. Saute until the sauce is reduced and is not thick. Try and be sure to adjust your taste.

Za salatu, nasjeckajte kupus, papriku i naribajte mrkvicu. Dodajte dovoljno soli, začina, te sve prelijte umakom od majoneze, limuna i jogurta.

Za ukiseljenu salatu, tanko narežit ljubičasti luk i rotkvicu, dodajte malo soli i šećera, te prelijte s octom. Prekrijte papirom za pečenje i pokrijte s loncem ili nekom posudom kako bi se okusi proželi.

For salad, chop the cabbage, pepper and grate the carrots. Add enough salt, spices, and pour over the sauce of mayonnaise, lemon juice and yogurt.

For the quick pickled salad, thinly slice red onions and radishes, add some salt and sugar, and pour the vinegar over. Cover with baking paper and  with a pot or a pan to taste imbued.

U istoj tavi u kojoj ste pekli meso, ispecite i slaninu, a dodajte i prerezana peciva kako bi se ugrijala i upila sokove iz mesa i slanine. Slažite po želji! Na dno obavezno stavite puno umaka od whiskeya, a zatim meso, pa slaninu i povrće. Poslužite uz pivo i neku dobru utakmicu! 😀

 

In the same pan in which you have roasted the meat, fry the bacon and add the cut buns to warm up and soak up the juices from meat and bacon.Put a lot of whiskey sauce on the bottom, then meat and bacon and vegetables. Serve with beer and a good game! : D
