Carrot Muffins – Muffini od mrkve

Evo i zlaćane jeseni i s njome oblih plodova bajkovite dubokonarančaste bundeve, razigranog kestenja, trpkih tamnih marmelada i vina dubokog okusa. Bundevica već nekoliko dana strpljivo stoji na kuhinjskom šanku, smješka mi se i čeka svoj red da se iz skromne grbave obične bundeve pretvori u Pepeljuginu pratnju pod svjetlucavim prahom ružičaste kuhače. Ona čeka neku posebnu i romantičnu priliku, a dok ona čeka, mrkvice su se ugurale da dođu na red! I to, u ruhu za doručak. Možete ih poslužiti u krevetu, kad se želite razmaziti, uz mirisnu jutarnju kavicu prije svakodnevne strke, ili uzeti sa sobom u torbicu, kod medenih malih kolačića baš je zgodno to, što ih se uvijek može nositi sa sobom.

Here is it, the golden autumn and with it, rounded fruits of fairy tale deep orange pumpkin, playful chestnuts, bitter dark jam and wine of deep flavor. My pumpkin is  patiently standing at the kitchen counterfor several days, smiling at me, waiting for her turn to get out of the modest humpback ordinary pumpkin and turn into Cinderella’s friend under glittery powder of my pink ladle. It awaits a special and romantic opportunity, and while it waits, the carrots caught their 5 minutes to shine in a beautiful, healthy  breakfast. You can serve them in bed, when you want to indulge yoursef, with fragrant morning coffee before the daily bustle, or to take with you in your purse, with honey small muffins it’s very convenient that you can always carry them with you.

Moram priznati da sam dosada zanemarivala taj, kako nam priče za djecu oduvijek govore (i s pravom!), najvažniji obrok dana. Dosada mi se doručak sastojao uglavnom od jake turske kave s cimetom i naranče zimi, a u toplije dane ljetnog voća, ili pak raznih svježih sokova i smoothija. Međutim, uviđam polako kako za gastritis i slične želučane tegobe to i nije najsretniji način za početak dana, jer takav je sve češće završavao u bolovima. Stoga, odlučila sam se ozbiljno posvetiti doručku i dati mu kraljevsko mjesto u svojoj prehrani kakvo i zaslužuje. I on i ja 🙂


I must admit that so far I have ignored this, as our children’s stories have always said (and rightly!), most important meal of the day. So far, my breakfast consisted mainly of strong turkish coffee with cinnamon and orange in winter, and in the warmer days of summer fruit, or a variety of fresh juices and smoothies. However, I realize slowly that for gastritis and related stomach problems, this is not the happiest way to start the day, because it is more often ended in pain. Therefore, I decided to make a serious commitment to my breakfast and give him a royal place in my diet as it deserves and what you deserve. And me too 🙂

U ovim muffinima nema bijelog šećera, vrlo je mala količina pirovog brašna, a maslac je zamjenjen kokosovim. Ovako su muffini zapravo prilično čokoladni, ali ukoliko izostavite kakao, ostat će vam samo ona slatka mrkvasto cimetasta aroma koju ja apsolutno obožavam. Ljubitelj porvća u kolačima na djelu! 😀

Šalica – klasična za kavu, kao za jogurt

Sastojci:

Suhi:

1 šalica mljevenog lješnjaka

1/2 pirovog brašna

1/2 mljevene zobi

1/3 mljevenog lana

1/3 kakaa(gorki)

1 prašak za pecivo

1 žličica cejlonskog cimeta

Mokri:

1 jaje

1/2 kokosovog ulja – istopiti

1/2 meda (opcionalno 1 žlica muscovado šećera)

1/2 mlijeka

+3 mrkve – naribane sitno


These muffins no white sugar, very small amount pirovog flour and butter is replaced by coconut. Thus muffins are actually pretty chocolate, but if you don’t use cocoa, it will have just that cute carroty cinnamony flavor that I absolutely adore. Fancier of veg in sweets  work! : D

Ingredients:

dry:

1 cup ground hazelnuts

1/2 spelt flour

1/2 ground oats

1/3 ground flax

1/3 cocoa (bitter)

1 baking powder

1 tsp Ceylon cinnamon

wet:

1 egg

1/2 coconut oil – melt

1/2 honey (optional 1 tbsp muscovado sugar)

1/2 milk

+3 Carrots – finely grated

Postupak, kao i za svake muffini, brz i jednostavan. Najvažnije je da ne miješate smjesu mikserom nego pjenjačom kako bi ostali prozračni i mekani.

Naribajte mrkve ili ih stavite u blender. Sameljite i lješnjak i zob. Suhe sastojke stavite u jednu zdjelu, a mokre u drugu i promiješajte dobro pjenjačom. Dodajte mokre u suhe i lagano izmiješajte. Dodajte još i ribanu mrkvu uz pomoć špatule. Stavite peći na 180 C 20 minuta, najviše 25! Prekrijte krpom dvije minute, a zatom vadite iz kalupa. Ja ih čuvam izvan frižidera, ali ih zaštitim krpama, mogu stajati 3-4 dana. Od ove količine dobit ćete cijeli veliki pleh muffina! Zdravo može biti i fino, samo kada mu posvetimo pažnju i pozornost kakvu dugujemo sebi 🙂 Ugodan početak lijepe jeseni! 🙂


The procedure is, as well as for each muffins, quick and easy. The most important thing is not to mix the mixture with a mechanical mixer, rather with a whisk to remainso the muffins remain airy and soft.

Grate carrots or put them in the blender. Grind the hazelnuts and oats. Put the dry ingredients in one bowl and wet in another, and stir well with a whisk. Add wet to dry and gently mix. Add the grated carrot with the aid of a spatula. Bake at 180 C for 20 minutes, up to 25! Cover with a cloth for two minutes, and removing atoms from the mold. I keep them out of the refrigerator, or protect them with kithcen towels, they can stand 3-4 days. From this amount you will get a whole big pan of muffins! Healthy can be delicious, just with some attention  that we owe to ourselves 🙂 Have a nice beginning of a beautiful autumn! 🙂
